Fudge Brownie Cake

We serve this cake in the evening during our community hour. It is one of our most requested recipes. Guests tell us this cake brings them sweet dreams!

Fudge Brownie Cake

Melt and let cool:

  • 3 ounces unsweetened chocolate

Cream together until fluffy:

  • 1-1/2 cups sugar
  • 1-1/2 sticks butter

Beat in:

  • cooled chocolate (see above)
  • 3 egg yolks (save the whites for next step)
  • 1-1/2 tsp. vanilla

In separate bowl, beat until foamy

  • 3 egg whites

Add and beat until stiff but not dry:

  • 1/8 tsp. cream of tartar

Fold egg white mixture into chocolate mixture alternately with:

  • 1/2 cup flour

Fold in:

  • 1-1/2 cup chopped nuts (walnuts or pecans)

Pour into buttered floured 9″ springform pan.

Bake at 375 degrees for 25 to 30 minutes, just until center is almost firm when pressed gently.

Serve cooled with whipped cream.
